2012 Michelin Guide Upgrades New York Eleven Madison Park
Chef Daniel Humm now a member of the international chef’s club of who’s who.

When Chef Daniel Humm decided to head east to New York City in 2006 after a three-year stint at Campton Place restaurant, he definitely had his sights on the stars. Foodies in San Francisco were saddened to see his departure, as they had big hopes for his future accolades following his 2005 Food and Wine award as Best New Chef.

After receiving a star in St. Gallen, Switzerland at Gasthaus zum Gupf restaurant in 2002, Chef Humm was determined to delight the palates of an American clientele and establish himself as a true three-star chef. When Eleven Madison Park took him on in 2006 as the chef, he not only reinvented the menu but also brought on his entire San Francisco staff. Equipped with a beautiful dining space, excellent wine list and connections to one of the best cheese mongers from the West Coast, Humm was set to make his mark in the New York City dining scene...and he has, with three more stars!

Born in Zurich in 1976, Humm's Swiss mentors include Gêrard Rabraey of the Michelin three-star Le Pont De Brent, who once considered retiring but decided his love for the cooking was not worth the early departure. His influences are definitely European and reflect the sensibilities of market-driven cuisine, utilizing the season's top choices from local sources. His preparations are cooked gently under low temperature and favor classic flavor combinations.

Humm is a disciple of legendary culinary genius, chef Fredy Girardet of Crissier fame who won the international food world over with his light nouvelle cuisine. In the 1970s, during a time when molecular cuisine was on the rise, Girardet became very vocal about his distaste for the technique and stuck behind his creed for traditional ingredients; he considered it detestable to the gourmet experience to use non-natural ingredients in the kitchen. Thanks to his persistence for all things natural, the Swiss fleet of younger chefs, including Daniel Humm, honed their craft as a testimony to Girardet's genius. Congratulations to Daniel Humm on his three-star Michelin award for Eleven Madison Park!
